Why Einkorn is More Expensive
It is an ancient grain with significantly lower yields compared to modern wheat varieties, producing only about one-fifth the amount of grain per acre. The cultivation process is more labor-intensive, with einkorn featuring a thick, difficult-to-remove husk and requiring more time to grow and harvest. Additionally, einkorn is often produced on small family farms, frequently using organic methods, which further increases production costs. These factors, combined with its niche market status and specialized processing requirements, result in einkorn wheat berries typically ranging from $3.00 to $5.00 per pound, making it substantially more expensive than conventional wheat.
